Zucchini Casserole
serves 6
1/2 large onion, chopped 1/2 cup sour cream
4 tablespoons (1/2 stick) butter 3 cups cooked, drained (squeeze water out) squash
a pinch of each salt, pepper, garlic powder 1 cup grated cheddar cheese
1 cup crushed Ritz crackers, plus some for additional topping
Directions:
Preheat oven to 350 degrees. Saute` onion in butter for 5 minutes.
Remove from pan and mix all ingredients together. Pour into buttered
casserole dish and top with cracker crumbs. Bake for 25-30 minutes.
